*ALL ORGANIC INGREDIENTS*
- 6 ears of corn, cut off cob
- 2 lbs broccoli, cut off stems
- 2 onions, diced
- 2 large carrots, diced
- 6 cups low sodium vegetable broth
- 1 can coconut milk
- 6 oz sharp chedder, shredded
- 6 T olive oil
- 1 head garlic
- salt and pepper to taste
DIRECTIONS
Sauté garlic, onion, chopped corn, chopped carrots and broccoli in olive oil. Add vegetable broth and salt and pepper to taste. Simmer for 15 mins on low.
Place 75% of mixture in vitamix and blend for 10 seconds. Put back in pot, add coconut milk, stir and cover for 10 minutes on low.
Add shredded sharp cheddar and stir.
