*ALL ORGANIC INGREDIENTS*
- 1 large bunch of kale
- 1 cup cooked quinoa
- 4 small cucumbers
- 1 pint red cherry tomatoes
- 1 small red onion
- 1 small container feta
- kalamata olives
DRESSING
- 1/2 cup olive oil
- 1/4 cup lemon juice
- garlic and pepper to taste
DIRECTIONS
Remove center stalks of kale, chop, set aside.
Chop other salad ingredients, add kale and mix together in bowl, then add quinoa, olives and feta, mix again.
Pour dressing over salad.
With your hands, massage ingredients with dressing until fully coated.
